Healthy Blueberry Muffin Recipe
Ingredients You Will Need:
1 ½ cups all-purpose flour or whole wheat flour
½ cup yellow cornmeal
½ cup sugar or sugar substitute like Splenda
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup blueberries (fresh or frozen)
1 cup low-fat buttermilk
3 tablespoons butter or stick margarine, melted
1 large egg, lightly beaten
Non-stick cooking spray
Preheat your oven to 400 degrees. With a large bowl, spoon the flour into a measuring cup, making sure to get the precise amount of flour. Combine the flour with cornmeal, sugar, baking powder, baking soda and salt.
Take the low-fat buttermilk, which makes the muffins more health-conscious, butter and a large egg and whisk together in a separate bowl. Combine all ingredients and stir well. Take a cup of your fresh blueberries (frozen blueberries also work well) and drop them into the mixture, being careful not to break the berries.
Grease the baking cups with non-stick cooking spray and pour the mixture into the cups. For an extra kick of sweetness, you can sprinkle a pinch of sugar on the muffins before sticking them in the oven to cook for about 20 minutes.
To test if the muffins are cooked thoroughly, you can stick a wooden toothpick in the middle of the muffin to see if it comes out clean. If not, give them another minute or so. When they're ready to come out of the oven, let your healthy blueberry muffins cool for another ten minutes or so before serving.

To kick up your healthy blueberry muffins, you can also include grated lemon rind in the mixture for another fruit flavor with none of the calories. You can also substitute the all-purpose flour for whole wheat flour for an even healthier alternative.
